Another trademark juice-bomb red, this time using the unlikely blend of Cabernet Franc and Syrah, the former grape a real anomaly in this part of France. There is a lightness of touch on display that harnesses every last drop of vibrant fruit character; deep, lip-smacking blackcurrant fruit with a green, herbal fragrance, plush sheen and plenty of intrigue. Tom's more rustic, structured Syrah - a nice counter to the airy 'Poolside'. That lighter wine does play its part here, the whole bunches of old vine grapes are submerged in its fermenting juice, providing a balance of what he describes as 'youth and wisdom'.
