This cider was topped up with a little Viognier from last year’s harvest at Le Mazel (this juice will become Cuvée Mias, one of the Mazel wines Wayward imports directly). The bubbles waiting to burst forth are the result of a unique fermentation that has taken place inside each individual bottle, from loose, low-key ancestral method spritz through to the tightly-moussed, needle-prick fizz of a regal Champagne or Cava.
